No added sugar, no grains, no dairy, amazingly yummy banana bread!
Ingredients:
- 4 very ripe bananas, mashed (I whizz them in a small food processor, but mashing with a fork is fine too)
- ⅓ cup coconut oil, melted
- 4 eggs, room temperature
- 1 tsp vanilla extract
- 1½ tsp ground cinnamon
- ½ cup coconut flour
- 1 heaped tsp baking soda
- ¼ tsp salt
Method:
Preheat the oven to 180°C and line a loaf pan with baking paper.
Mix all ingredients together in a bowl until well combined. Spoon into prepared loaf pan and bake for 45mins or until a skewer inserted into the centre comes out clean.
